Cucumbers salad with tahini sauce is one of the healthiest dishes you can have, and can be used as a wonderful addition for lunch or dinner.
1.5 KG cucumbers
1 tablespoon salt
3 tablespoons “Baracke” tahini from whole sesame
1 tablespoon lemon juice
2 tablespoons boiled water
½ Garlic clove chopped
Lemon zest from 1 lemon
1/3 cup chopped red onion
2 tablespoons chopped mint
2 tablespoons chopped basil
2 tablespoons chopped parsley
Salt and pepper (as you like)
1.Slice cucumbers lengthwise and scrape seeds out using a spoon.
2.Chop cucumbers into small dices.
3.In a separate bowl mix tahini, lemon juice and boiled water until it is a smooth sauce. Add garlic, lemon zest and red onion.
4.Add chopped cucumbers to the tahini sauce, add herbs, salt, pepper and mix all together.
5.Serve cold.
